serves 6 (1 individual soufflé per person)

Ingredients:
•    5 ounces dark chocolate (minimum 70% cocoa)
•    1/3 cup granulated sugar
•    3 egg yolks
•    6 egg whites
•    salt
•    2 tablespoons strong espresso coffee (brewed)
•    powdered cocoa

Method:
1.    Preheat oven to 375. Butter 6soufflé ramekins.
2.    Melt chocolate in double broiler set over pan of simmering water on medium heat.
3.    In separate bowl, whisk egg whites with a pinch of salt until soft, glossy peaks form. Continue beating egg whites on high speed gradually adding the sugar until stiff glossy peaks form. Set aside.
4.    Stir egg yolks into melted chocolate; stir in coffee. Gently fold in about 1/3 of egg white mixture then fold in remaining egg white mixture. This combined mixture should look light brown and bubbly without streaks of white.
5.    Spoon soufflé mixture into ramekins and place in oven. Bake for 15 minutes until risen with a crusty top. Before serving, dust the soufflé tops with cocoa powder.
