Every bride wants a special cake for their wedding day – but this is something else.

It took more than 120 hours to bake and decorate and then had to be transported with all the care reserved for an Old Master. No wonder then that this stunning baking creation by Newport woman Elizabeth Fundell has been voted the best wedding cake in the country.

Miss Fundell, who runs The Cake Collection, won the prestigious award at the International Cake Decorating and Baking Show at London’s ExCeL on Sunday.

Her design was a gold royal iced cake which Miss Fundell made in Shropshire before having it carefully transported to the capital.

Miss Fundell, 40, said: “I was absolutely thrilled to win the award after weeks of hard work. There were some fantastic entries on show so it is a real honour.”

Her prize includes a masterclass with Queen of Hearts Couture Buttercream Cakes in London.

There were over 200 entries in the contest, run by the Cake Craft & Decoration Magazine, and 50 in the Wedding Cake class. Throughout the cake-making process, Miss Fundell was filmed by Superhero TV for a new series called Winners, to be aired on Sky1 in the summer.

The crew filmed Miss Fundell at her home and out and about in Shropshire buying materials.

The mother-of-one is now focusing on building her cake business and is also starting cake decorating classes in the Newport area.

Miss Fundell said: “At the show, I was asked by many people if I taught, but since I moved to Newport five years ago, I haven’t.

“I am looking for suitable venues and ultimately some premises which will give me the space to teach small classes.

“I have also been asked to become a judge at future cake International shows, but would like to do some demonstrating before I enter the judging arena.”
